Darren's Graduation



On Thursday we all piled in the van and drove down to Valdosta for Darren's Graduation! The road trip was about 2 1/2 hours and I think Hailey asked about 250 questions :-) At one point...only about 45 min. into it Jack piped in and said, "Hailey, you make me crazy!" Darren and I just started dying :-) He took the words right out of our mouths!! My brother, Tyler (Uncle Bubba) rode with us. My dad, mom, Uncle Tom, and Auntie Joyce drove down with us too!
We stopped and had lunch about half way down at a Shoney's. It was so good! And both my kids ate for FREE!! Yea for Shoney's! I think this is one of the only one's still around :-)
Back in the van...and we hurried to get their on time. I'm glad we got their when we did because it filled up fast and became standing room only. But on my goodness...the a/c!! It was not working well enough and we were miserable! THANK GOODNESS the thing only lasted 45 min. but we got there an hour early so once it was over....we ran out of the room :-)
Here's the front of the program...they graduated people from the AirForce Community College, Embry-Riddle Aeronautical University, and Park University.

Getting his "fake" Bachelors Degree in Criminal Justice....they send the "real" one in the mail! Waving to the kids! He's so glad to be done!! Group shot just so we can say we were all there! By this time we were all hot, moody, and ready to get something to drink :-) Luckily there was a nice set up in the restaurant area with refreshments and food!

Okay....now on to what we had for dinner tonight! I got this recipe from another blog a long time ago but never got around to trying it.... It was a hit with the kids (for the most part) and super easy!
INGREDIENTS:

1 LB. GROUND BEEF

1/2 C KETCHUP

1 T MUSTARD

2 T BROWN SUGAR

1 CAN BISCUITS

1/4 C SHREDDED CHEESE

DIRECTIONS:

PREHEAT OVEN TO 400 DEGREES. BROWN THE BEEF AND DRAIN. MIX KETCHUP, MUSTARD, AND BROWN SUGAR TOGETHER TO MAKE A BARBECUE SAUCE. ADD THE SAUCE TO THE BEEF. SEPARATE DOUGH INTO BISCUITS. FORM DOUGH INTO CUPS ON THE MUFFIN TINS. SPOON THE MEAT INTO THE DOUGH CUPS. BAKE AT 400 DEGREES FOR ABOUT 10 MINUTES(OR UNTIL THE BISCUIT DOUGH LOOKS DONE).SPRINKLE THE TOPS WITH CHEESE. AND DINNER IS SERVED!

Congratulations, Darren! How does it feel to be a college graduate?? Those little cups look really good, Stacia! And it sounds easy, so it's right up my alley! :D

Congrats!! Sounds like more than a little adventure to graduation too. (and Shoneys - love their chicken strips. I really miss them)

BTW, my first job when I turned 16 was working at a Shoney's. Hot fudge cake rules!!

I love Shoney's There is one in Gardendale, AL (our hometown). My mouth just waters over their hot fudge cake. YUMMMMM.
